Father-son team Barry Lillywhite and Anton Green were spruiking their new crowd-funded initiative at Eat Local Thursday.
Yesterday, the Advertiser reported award-winning cheesemaker Mr Lillywhite had Junee Licorice and Chocolate Factory owner Neil Druce on board for his plans to resurrect Coolamon's antique cheese factory.
"Crowd funding, through Pozible, went live last night at 1am and by this morning we raised $910," Mr Lillywhite said.
Mr Lillywhite and Mr Green have been speaking to Barellan Beer entrepreneur Stuart Whytcross, who has successfully launched the frothy beverage almost entirely through community fund-raising.
"He gave us lots of information, which was great," Mr Lillywhite said.
"He really urged us to have people on board because they offer so much support."
Following in Mr Whytcross's footsteps, pledgers to Coolamon Cheese will be involved throughout the process.
Mr Green was excited by the massive potential for the cheese factory, saying different food factories could work together to create a food region.
"Neil is already a shareholder and he says two similar businesses in the area could see both have a visitation of 150,000 a year," Mr Green said.
"We will have a pristine cheese factory and viewing windows," he said.
The old factory will be restored to its original condition, giving patrons an opportunity to taste a slice of Coolamon's history and understand cheese making.
It is expected to produce a number of cheeses including a range of Australian native flavoured hard cheese, camembert, camembert with a blue flavouring, and feta, with the potential for more.
Mr Green mooted the possibility of producing non-homogenised milk.
Wagga cheese lover Jan Dyce brought out the cheque book to help get the start-up going.
She hoped it would ge off the ground.
"It's brilliant cheese and to have something local is fantastic," she said.
"Having the two venues (the liquorice factory and the cheese factory) will create a tourism triangle, which will be really good."
Should all go to plan, Mr Green hopes to begin developing the factory in January with an opening pegged for September.
