The winners are:
Dianne Neyland from Adelong who ebtered a recipe for ;
Pumpkin, pineapple and prune cake
Ingredients:
75g plain flour, 75g self raising flour, 165g castor sugar, 1/2 teaspoon of bicarb soda, 125mls vegetable oil, 2 eggs (lightly beaten), 1 cup coarsely grated butternut pumpkin, 90g chopped pitted prunes, 1/2 cup crushed pineapple (well drained).
Method:
Preheat oven to 170 degrees celsius and grease a 20cm round pan, line the base with baking paper.
Sift flour, sugar and bicarb soda into a medium bowl. Add the oil, eggs, pumpkin, prunes and pineapple. Stir until well combined. Spread mixture into prepared pan, bake for about 45 minutes or until cook when tested. Stand cake in pan for about five minutes before turning out onto a rack to cool. Spread cake with lemon glace icing when cooled.
Andrew Driscoll from Milbrulong submitted a recipe for;
Yo yo biscuits
Ingredients:
6oz butter at room temperature, 6oz plain flour, 2oz icing sugar, and 2oz of custard powder.
Method:
Sift dry ingredients a few times, mix well with butter. Roll tablespoons of mixture and flatten on lined tray. Bake in moderate oven until light brown. Join with icing or put icing on top.
Sue Kimber from Wagga submitted a recipe for;
Kimber’s casserole of pork chops
Ingredients: 4 pork chops, 1tbs of oil, 1 large brown onion (finely chopped), 1 clove of garlic crushed, 1 can of condensed tomato soup (or crushed tomatoes), 1/4 cup dry sherry, 1/2 teaspoon of curry powder, 1/2 teaspoon of dried sweet basil and a pinch of sugar and black pepper.
Method:
Trim rind and excess fat from chops. Heat oil and brown chops. Remove chops and fry onions and garlic and curry powder, and then add remaining ingredients. Place chops into lasagne type casserole dish and pour over sauce and bake un covered for 40 minutes to one hour in a moderate oven.
