The pair starred for Australia as the host nation capped off a dream week by defeating South Africa 34-21 in the final.
Eight teams competed in the cup with up to 8000 spectators attending most days.
"It was fantastic to win the way we did," Jim said.
"To lose in 2015 and come back and win this one is pretty awesome.
"This is our biggest achievement by far."
Australia finished on top of its pool and cruised into the decider with a big win over New Zealand.
It then beat the defending champions with Jim and Lucy and cousin Abbott Grills playing leading roles.
"I don't think Lucy should have been shocked to win the female player, but our boys were pretty even and it could have gone to any of us," Jim said.
"I was a bit lucky.
"We had a really good team.
"There was a great atmosphere, it was a really good event."
Australia took out the world cup in 2003 and 2007 before South Africa hit back with wins in 2011 and 2015.
Jim will resume his football commitments with Ovens and Murray club Albury against Corowa-Rutherglen on Saturday.
